Avocado chevre spread on poached salmon; rocket salad wontons

This spread adds color and a creamy freshness to fish. You can also enjoy it as a simple spread on crostini, or as a dip for pita chips or vegetables. Simple and fantastic!

  • Flesh of 2 medium avocados
  • 5 oz of Chèvre (choose a soft goat cheese with a mild flavor)
  • 3 tsp lemon zest
  • 4 to 5 tsp fresh lemon juice
  • 1 clove minced garlic
  • 1/4 tsp salt
  • Fresh ground pepper

Place the avocado, chèvre, lemon zest, lemon juice, garlic & salt in a food processor and blend until smooth. Add pepper to personal taste. Enjoy!

Makes about 1 1/4 cups of pure fabulousness.
